
Ingredients:
- 1 small can of tomato puree or whole tomatoes (usually this is a bigger can so half)
- 4-6 eggs
- 2 tbsp olive oil
- optional: goat or feta cheese, parsley, 1/2 yellow onion, side of toast
- seasonings: salt, pepper, paprika
Preparation:
- Heat the oven to 400F.
- In a cast iron skillet (if you don’t have this just use a regular pan) add olive oil, and onions (if using). Saute onions first (you don’t need onions but it adds to the overall flavor).
- After onions have cooked over medium heat for about 5 minutes, add tomato sauce. Allow tomato sauce to cook for about 5 minutes before adding eggs.
- Gently crack eggs into pockets of the tomato sauce and cook over heat for 3 minutes before placing in the oven. Add seasonings.
- Depending on how you like your eggs cooked (softer/runnier = shorter time, harder/cooked = more time) let the eggs cook. I like to cook for about 7 minutes.
- Once cooked, add toppings of choice. Add some toast to soak up the yummy tomato sauce.
