Ingredients:

Preparation:

  1. Heat the oven to 400F.
  2. In a cast iron skillet (if you don’t have this just use a regular pan) add olive oil, and onions (if using). Saute onions first (you don’t need onions but it adds to the overall flavor).
  3. After onions have cooked over medium heat for about 5 minutes, add tomato sauce. Allow tomato sauce to cook for about 5 minutes before adding eggs.
  4. Gently crack eggs into pockets of the tomato sauce and cook over heat for 3 minutes before placing in the oven. Add seasonings.
  5. Depending on how you like your eggs cooked (softer/runnier = shorter time, harder/cooked = more time) let the eggs cook. I like to cook for about 7 minutes.
  6. Once cooked, add toppings of choice. Add some toast to soak up the yummy tomato sauce.
